These are my favorite easy-peasy fish cakes. Yes your kitchen will smell like a fish, but they are quite worth it. I will generally actually use canned Salmon for these, but any cooked flaked fish should work.
1 big can of Salmon (I believe they are 14.5 oz typically)
2 Tbs Coconut Flour
2 tsp Fajita Spice
1/3 tsp Chili powder
Pinch of Cayenne
2 Green Onions (or a small bunch of chives, I always use chives from my garden in the summer)
1 Egg
Dump your fish in a bowl and pick out all the big spine bones. Add everything else and mix it up real good. Form whatever size patties you'd like. Heat some oil in a skillet and cook your cakes until brown on both sides and hot all the way through (I usually do about 5 minutes on each side). They can be a little bit fragile so be gentle when flipping them. And eat and embrace the Omegas and enjoy!
