INGREDIENTS:
1 cup cooked Sweet Potato (I usually just wrap a large Sweet Potato in a paper towel and microwave for 4 minutes on each side, then scrape out a cup)
2 cups Old Fashioned Oats
1 cup All-Purpose Flour
1/4 tsp Baking Powder
1 Egg
1/4 cup Peanut Butter
3 Tbs Honey
Heat the oven to 350 and spray a cookie sheet. Add dry ingredients to a food processor (Oats, Flour, Baking Powder) and mix until the oats are ground up. Add in everything else and mix until you get a ball of dough (it will be pretty sticky). If you have a glorious giant cutting board use that, but if you're like me, dump a bunch of flour on your counter and roll the dough out until it's about 1/2" thick. Cut out with cookie cutters. Repeat until dough is used up. Put on cookie sheet and cook until the treats are stiff, about 30-40 minutes. Go on the lower side for softer, higher for crunchier.
