This one is an absolute favorite, but takes some time to slow cook. The beauty of it is, even the toughest old buck will just fall apart with a fork.
2-3 lbs of meat (I just used steaks cut up into about 1 ½ chunks)
1 tbs of oil (I recommend coconut of olive but it shouldn’t matter)
can of tomato sauce (one of the 15oz ones)
½ cup balsamic vinegar
4 dates (the dried whole pitted ones)
6 garlic cloves (I am too lazy to mince up the real ones so I just use the kind in the jar, ½ tsp=1 clove)
For the rub:
1 tbs dried rosemary
1 tbs dried sage (I only had ground sage and used about ¼ tbs)
1 tbs garlic powder
1 tbs onion powder
1 tbs paprika (I only had smoked paprika and it was awesome)
1 tsp black pepper
Preheat your oven to 300. Mix up your rub in a bowl big enough to fit all the meat. Pat the meat dry as best you can, I just squeeze a few pieces at a time in a paper towel, and throw it all in the bowl with the rub. Then get dirty and just use your hands to mix it all into the meat really good. Grab a dutch oven with a lid and heat your oil over med-high heat. Throw in the seasoned meat and just sear the outsides, usually takes about 2-3 minutes. Then throw in the sauce, vinegar, dates, and garlic and mix it all up. Once it starts to bubble throw the lid on and toss it in the oven for 3 hours.
(If you wanted the honey glazed carrots, just heat your oven to 400. Peel and cut a pound of carrots in half and half again (Like one carrot will end up in four pieces lol too many half’s). Then put them in a bowl and toss with a tbs of olive oil, ½ tbs of honey, ¼ tsp each salt and pepper. Then dump them on a baking sheet and cook for 30 minutes.)
