I love crockpots. And beets. And it's almost winter, so comfort food season is upon us! This recipe is wonderful because you can just dump everything in, go to work, and when you get home A) your house smells amazing and B) you don't need to cook dinner. It might not be for everyone, I'm one of those crazy people who could live off beets and cabbage, so I think it's a winner. But to each his own. If you post anything involving Tofu for instance I won't touch it with a ten foot pole. So if you're like me and think vegetables that grown in the dirt are most wonderful, I think you'll enjoy this as much as me.
INGREDIENTS:
1 lb Venison, chopped into stew chunks
3-4 big beets, peeled and chopped into chunks (go with four, I love beets)
2 potatoes, peeled and chopped into chunks (Matt likes russet, I hate white potatoes, so just pick your favorite)
1 Onion, minced
2 Carrots, chopped or diced however you prefer
28 oz can diced Tomatoes
6 oz can Tomato paste
2 cups Beef Broth
4 cloves Garlic, minced
6 Tbs Red Wine Vinegar
3 Tbs Maple Syrup
1.5 tsp Dill
1 tsp Parsley
1 tsp Salt
1 tsp Pepper
1 Bay Leaf
1 small head Cabbage, cut/shredded (your favorite color, I like stereotypical green)
If you want to exert yourself, you can brown your meat or saute your onions before adding them. But I don't, so I'll just leave it up to you.
Add meat, beets, potatoes, carrots, onion, and can of diced tomatoes to crock pot. In a bowl mix everything else BUT the cabbage then add it to your crockpot. Cook on Low 8-9 hours. Mix the cabbage in and up the crockpot to high. Cook another half hour or 45 minutes and devour.
