For us, weekends mean breakfast. Ain't nobody got time for that during the work week, grab an apple and run for the time clock. I wish it were different, but it's all I can do to get up after hitting snooze 5 times to feed dogs and chickens and fish and barely make it by 7 to work. And this casserole is perfect because you can have leftovers for the next morning, or for dinner, or at midnight. It's good, eat it when you want.
INGREDIENTS:
10 oz ground Venison Breakfast Sausage (I say 10 oz because that's how I package ours, use a lb, use less, use Jimmy Dean I don't care, if it's in links just take it out)
1 big sweet potato, cut into little chunks (I usually do about 1/2")
4 slices bacon, chopped about 1/2" wide
6-8 Kale Leaves (cut off the stem them ripped/cut into tiny pieces)
6 Eggs
1/4 cup Milk (I like almond, but it's not about me)
1 tsp Cumin
1 tsp Coriander
1 Tbl Nutritional Yeast
Put your sweet potato in a bowl and add 1/4 cup water. Cover, and microwave until just tender enough to stick with a knife, about 3-5 minutes. If there's water left in the bowl dump it out.
Fry your bacon in a pan until it's ALMOST crisp but not quite. Then add your sausage and brown it up. Add the Kale and stir until it's wilted. Then add your Sweet Potato, Cumin, and Coriander, mix, and shut off the heat.
In a big bowl mix the Eggs, Milk, and Nutritional Yeast. Add your meat and veggies and mix it all up. Spray a cooking dish, I like to use a ceramic pie dish, but a glass casserole dish or anything would work, and dump in the mixture. Cook at 375, check after 20 minutes to see if the eggs are all set (not jiggly), cook longer if needed. Cool for a few minutes and enjoy!
