1 Egg
2-3 Tbs Lemon Juice
Pinch of Salt
1 Cup EXTRA LIGHT (this is important!) Olive Oil
(I like to add a squirt of Dijon but it's totally optional! You can also add any other flavoring you might desire; garlic, etc. The possibilities are endless!)
Grab yourself an old jar that you can fit the head of your immersion blender through. Dump in all your ingredients. Count to ten (just so the egg has a chance to settle at the bottom of the jar). Stick the blender in all the way to the bottom and fire that sucker up. Just hold it there without moving for a good twenty seconds. Then, slowly start moving it up and around to make sure all the oil is mixed in, being careful not to pull it out too far and send your beautiful mayo gold flying everywhere. Once you can't see any more oil that's it! It's seriously magic, I'm still amazed every time. Cover with the lid and it will stay good in your fridge for two weeks!
