Wet Ingredients:
1/4 cup Peanut Butter
1/4 cup Veggie Oil
1/3 cup Honey
1 Egg
1 Banana
Dry Ingredients:
1 cup Flour
1 tsp Baking Soda
1 tsp Baking Powder
Frosting Ingredients:
2 oz (1/4 bar) Cream Cheese (soft, I just leave the frosting ingredients in a bowl on top of the oven while the cupcakes cook and it gets it soft enough)
1/4 cup Peanut Butter
Milk (a few teaspoons)
Heat the oven to 350. Line 9 holes in a muffin tin with liners.
Mash your banana up in a medium sized bowl, then add the rest of the wet ingredients. Mix it all up until combined. Mix your dry ingredients in a small bowl, then slowly mix them into the wet stuff (I did it in thirds-ish). Divide it up between the muffin cups, then bake for 18 minutes, or until you stick a toothpick in the middle of one and it comes out without any goo on it. Take them out and let sit for 5 minutes, then remove to a rack. Wait about 15 minutes, or until the cupcakes are basically cool. Mix up your frosting beginning with 2 tsp of milk, if it's not quite a spreadable consistency keep adding a teaspoon of milk at a time until it is, I think I used probably 5 teaspoons. Then spread the frosting on top of each. I had some teeny treats on hand so I stuck them on top for looks, but I don't think your pup will judge you if you don't. Then sit back and watch them love life! (Obviously if you have a little dog just give them half of one.)
