So if you know me, you know Mindy. And if you know Mindy, you know she's fast approaching her 18th Birthday and only has one tooth. (If you don't know me, Mindy is a Rat Terrier) But besides that, she's full of moxie and not looking like she's going to quit any time soon. The big problem though is she can't eat anything hard, so I'm always trying to figure out stuff I can make her that she can chew! These cookies are a winner, both our dogs loved them. And you can adjust your cook time to the consistency you want your cookies. If you have one of those magical dogs with teeth, cook them a bit longer to get crunchy cookies. If you have a Mindy, cook them less for chewy cookies. And in the end it's great to know what you're feeding them.
INGREDIENTS:
1 cup cooked Sweet Potato (I usually just wrap a large Sweet Potato in a paper towel and microwave for 4 minutes on each side, then scrape out a cup)
2 cups Old Fashioned Oats
1 cup All-Purpose Flour
1/4 tsp Baking Powder
1 Egg
1/4 cup Peanut Butter
3 Tbs Honey
Heat the oven to 350 and spray a cookie sheet. Add dry ingredients to a food processor (Oats, Flour, Baking Powder) and mix until the oats are ground up. Add in everything else and mix until you get a ball of dough (it will be pretty sticky). If you have a glorious giant cutting board use that, but if you're like me, dump a bunch of flour on your counter and roll the dough out until it's about 1/2" thick. Cut out with cookie cutters. Repeat until dough is used up. Put on cookie sheet and cook until the treats are stiff, about 30-40 minutes. Go on the lower side for softer, higher for crunchier.
