So there is probably not a more American summer side dish than potato salad. In my opinion, this takes it up about ten notches as far as taste and health. Lose those starchy bland white potatoes, and embrace the sweet potato! There's flavor and crunch and everything wonderful about what summer should be! Once you try it, I promise you won't go back!
Ingredients:
4 medium sized Sweet Potatoes (cubed to whatever size you prefer)
1 "Smallish" Red Onion, or half a big one (finely diced)
1/2 cup Celery (finely diced)
1/2 cup mayonnaise (BEST MAYO EVER or store bought)
2 Tbl FRESH Dill (chopped up nice and fine)
1 Tbl Apple Cider Vinegar
1 Tbl Lemon Juice
1 tsp Sea Salt
1/2 tsp Pepper
Put your diced Sweet Potato in a pot and fill with water to cover. Bring to a boil and cook just until knife/fork tender. Drain in a strainer and douse with cold water to stop the cooking process. Leave them to cool for at least 15-20 minutes, and begin prepping your other ingredients!
Cut up your onion, celery, and dill, and add it all to a large bowl with the rest of the ingredients. I like to mix all of this before I add my sweet potatoes, but either way add the sweet potatoes, and gently mix everything! You can eat it right away, but I would definitely recommend allowing time for the flavors to meld in the fridge and everything to get nice and chilled!
