Wild Turkey thighs and legs. Dear lord. They definitely weren't built like their distant butterball cousins. You can't cook them conventionally like your Thanksgiving turkey, but there's no reason to throw them out like most people do! I like to save up a big bag, and use a rainy day to boil them all and render the meat for all kinds of uses. Stews, pies, and this chili. The Venison Crimini Chili is without a doubt our favorite, but this one is just as good. Lighter, simpler, and great for weeknights when you need dinner in a hurry. You can just as easily substitute store-bought ground Turkey/ Chicken, and it makes a big batch, although I do usually half it. It's mega meaty if you use cooked Wild Turkey, as cooking it yields a greater volume/per lb.
INGREDIENTS:
2 lbs Wild Turkey thighs/legs cooked and shreaded (or store-bought meat *see note)
2-15 oz cans Kidney Beans
1-28 oz can Crushed Tomatoes
1-15oz can Diced Tomatoes
2 Peppers, diced (your choice color)
I Onion, diced
3 cloves Garlic, minced
2 cups Chicken Broth
2 Tbs Chili Powder
2 tsp Hot Sauce (Franks)
1 tsp Oregano (dried)
1 tsp Basil (dried)
1 tsp Garlic Powder
1.5 tsp Salt
1/2 tsp Cayenne (or to taste)
*If you are using store-bought rotisserie chicken/turkey follow the same. If you are using ground store-bought meat, when you add it cook until browned before adding additional ingredients.
In a big pot add a couple Tbs Olive Oil and saute your onions and garlic until translucent, stir constantly as garlic likes to burn! Then add your peppers and cook a few minutes more until they start to get soft. Then add your meat, beans, tomatoes, stock, and seasonings (everything else), stir, and bring to a boil. Once boiling drop to a simmer and cook without a lid for 40 minutes or until it thickens. Let sit for a few minutes so you don't burn your mouth than shovel it in!
